Tuna Pasta Salad – Revamping the EVSC ‘Take and Go’ Meal Boxes

If you picked up the 10 day Grab and Go meal boxes given out by EVSC in partnership with AmeriQual, the kids in your home may be getting a bit burned out on the meal repetition.  This series will serve to find ways to use the items given in the boxes along with ingredients that are likely in your pantry to create new and tasty meals.

Tuna Pasta Salad (Ingredients contained within the box are marked with an *)

2 Pouches Tuna*

2 Packets Mayo* (more to taste)

1 Packet Salsa* (more to taste)

1.5 Cups Pasta

1/2 Teaspoon Onion Powder

1/2 Teaspoon Yellow Mustard

Salt/Pepper to Taste

1/2 Cups Add-Ins – shredded carrots, diced onion, peas, celery, shredded cheese, corn are all options.

Cook and drain the pasta according to the instructions.  Let pasta cool and mix all ingredients together.  Serve on a bed of lettuce if you wish.
