This recipe come together in about 15 minutes! This is a fantastic side dish or pile it on top of a slice of toasted bread smeared with hummus or avocado for a full meal.
1 Tbs Olive Oil
1-3 Tbs Chopped garlic
1/4 Cup nuts or seeds of choice
1-2 Tbs lemon juice (alternatively vinegar can be used)
2 Large handfuls of spinach
Salt/Pepper to taste
In a lidded pan add in oil and turn to medium heat. Add in garlic and nuts of choice and sauté for about 4 minutes until garlic is aromatic and nuts are toasted. Toss in the spinach, drizzle the lemon juice over the leaves, add salt and pepper. Put lid on the pan and turn off the heat. Let sit for about 10 minutes and stir. Enjoy!
