This is a delicious recipe that comes together quickly and can be easily modified to add in extra veggies. If you like onion rings – this is the recipe for you!
Onion Fritters
2 1/2 Cup thin sliced onion (or replace a portion of the onion for shredded veggies – try zucchini, carrots, sweet potato, or for a more exotic flavor try fennel)
3/4 Cup flour (replace up to 1/4 cup for whole wheat flour)
2 TBSP Corn flour
2 TSP Baking Powder
1 TSP Salt
1 TSP Garlic Powder
1 TSP Paprika (optional)
3/4 cup milk
1 egg
2 TBSP oil of choice for cooking
Mix the onions (and veggies if you will be adding them) with everything except the oil. Add a bit more milk if needed – the mixture should be similar to pancake batter.
Heat a frying pan to medium heat and add oil.
Put about 1/4 cup of mix into the hot pan and fry until browned (about 3 minutes on each side).
Serve with sour cream to dip in if desired.
