These patties come together in about 30 minutes and are perfect as the main course. They freeze exceptionally well so it’s ideal for large batch cooking.
Lentil Patties
3/4 Cup Lentils
1 Cup water or broth
1 Egg (or egg substitute)
4 Tbs flour of choice
Half of a small onion chopped
Half of a bell pepper chopped
2 Tsp Garlic
1 Tsp Paprika
2 Tsp Parsley
1 Tsp Onion
1 Tsp Cumin
2-4 Tbs Oil of choice
Salt/Pepper to taste
Cook lentils according to instructions in the water/broth. As that is cooking, sautee the onion and pepper in a saucepan with a tablespoon or so of oil. Cook until onions are transparent. Once the lentils are cooked, put into a food processor with the cooked onion/peppers and pulse a few times (don’t overmix, you want a bit of texture left). Put the lentil into a medium sized bowl and add in all the other ingredients (except the oil). Once mixed well, form into patties. This recipe will make about 8 patties. Heat your skillet that you used for the onions and peppers back up to medium/medium high heat with a little bit of oil. Place patties in the skillet and cook until golden brown and cooked through; about 4 minutes on each side. Serve with sauce of choice; try mixing siracha into mayo or sour cream for a tasty dipping sauce. Enjoy!
