Huevos Rancheros

*This is recipe is a generous serving for one.


2 eggs

1/3 cup refried beans

2 corn tortillas

4 tablespoons oil or butter

2 tablespoons salsa

Toppings of choice

Salt and pepper to taste

Heat a non-skillet with 2 tablespoons oil or butter to med heat and toast the tortillas on each side in the pan.  Remove tortillas and plate – set aside.  Warm refried beans. While beans are warming, add remaining oil or butter to pan and cook eggs to your preference (traditionally served over easy); salt and pepper eggs to taste.  As eggs are cooking – spread beans over the tortillas.  Once eggs are done, put on top of the beans.  Add salsa over the eggs and top with toppings of choice (fresh tomato, avocado, peppers, sour cream, jalapenos, etc).
