Ingredients:
Quinoa
Broth (optional)
2 Eggs
Veggies of choice (fresh or frozen)
Seasonings of choice (try garlic, onion powder, paprika, lemon pepper, or Italian seasoning)
Cook quinoa according to instructions (cook in broth for added flavor). Cook your veggies to desired doneness and season as you’d like. Cook 2 eggs however you like them.
Dish out a base of quinoa, place veggies on the side, and top with eggs. Salt and pepper to taste. Easy and nutritious meal finished super fast!
