Try it Tuesday! Chocolate Zucchini Cake

Zucchini is currently in season and can be used in a whole host of dishes.  Here we are adding it to a dessert for a delightfully moist but not too sweet cake!  Perfect to bring to your next picnic or BBQ.  Enjoy!

Chocolate Zucchini Cake

Ingredients:

2 Cups All purpose flour (replace one cup with whole wheat flour if you wish)

1/2 Cup Oil of choice

1 1/2 Cup Sugar

1/2 Cup Unsweetened Cocoa Powder

1 Tbsp Vanilla

2 Eggs

3 Cups finely shredded zucchini (Do not drain)

1 1/2 Tsp Baking Soda

1 Tsp Salt

1 Cup Chocolate chips or chopped nuts

Instructions

Preheat oven to 350 degrees and grease a 9 by 13 pan. In a large bowl combine oil, sugar, and vanilla until mixed.  Add eggs and mix well.  Add in all dry ingredents exept for the chocolate chips/nuts and mix, batter will be very dry. Fold in the zucchini and allow the batter to rest for 5 minutes, add in chocolate chips/nuts and mix again until combined.  If batter is still too dry let is rest another 5 minutes and mix again.

Spread batter into your prepared pan and bake for 30-35 minutes until a knife or toothpick comes out clean.
