Try it Tuesday! Chickpeas Two Ways

This week we have two extremely easy and delicious recipes using chickpeas (also called garbanzo beans).

Chickpea Salad

This is an excellent meal for lunch served on a wrap, bread, or in lettuce wraps.

Ingredients:

1 can drained and rinsed chickpeas

2 tbsp. minced onion

Approximately 2 tbsp. mayo (more or less to taste)

1 1/2 tsp. Cajun seasoning

1/2 tsp. garlic powder

1 1/2 tbsp. lemon juice

salt and pepper to taste

Drain and rinse chickpeas then pour them into a bowl.  Smash the chickpeas with a fork until they are the consistency you like.  Add in all the other ingredients and stir well.  Serve on bread or in a wrap.  Other tasty additions include grated carrot, sliced tomato, greens, or whatever you enjoy on a sandwich.

Chickpea Stew

A super easy meal that can be put together in minutes.  Serve with rice or pasta.

1 can chickpeas

1 can diced tomatoes

1 cup fresh baby spinach

1/3 cup either chicken or veggie stock

1/4 cup chopped onion

2 tbsp. oil of choice

1/2 cup chopped zucchini

2 or 3 cloves of garlic

2 tsp. smoked paprika

1/2 tsp. onion powder

1 1/2 tsp. salt

Rice or pasta

Chop onion and sauté  in the oil over medium heat in a medium size saucepan.  Once onions are translucent add in the drained chickpeas and the tomatoes with juice.  Add in all the other ingredients (except the rice or pasta) and stir well.  Bring it to a boil and then put a lid on the pan and turn the heat to low.  Let simmer for about 20 minutes.  After the 20 minutes, taste to see if veggies are cooked to your liking and to see if more seasoning is needed.  Serve with rice or pasta.  This dish would be great with other veggie additions such as: cauliflower, carrot, kale, etc.
