Try it Tuesday! Blueberry Oatmeal Muffins

These muffing use the beautiful blueberries coming into season right now and they come together extremely quickly.  They are a delicious breakfast or snack!

Blueberry Oatmeal Muffins

2/3 Cup All Purpose Flour

1/2 Cup Whole Wheat Flour

3/4 Cup Quick or Old Fashioned Oats

1 tsp Baking Powder

1/2 tsp Baking Soda

1 tsp Cinnamon

1/4 tsp Salt

1/2 Cup Maple Syrup or Honey

1/3 Cup Oil of Choice

1/4 Cup Milk (can substitute any non dairy milk)

2 Eggs

2 tsp Vanilla Extract

1 Cup Blueberries

Preheat oven to 425 and line 12 muffin cups with liners.  Mix together all the dry ingredients (except blueberries) in a medium bowl. Make a well in the dry ingredients and pour in all the wet ingredients.  Mix until combined and then gently fold in the blueberries.

Evenly distribute the batter in the muffin tins. Bake for 5 minutes at 425 then drop the temperature to 350 for 13-18 minutes.  Insert a toothpick to check for wet batter – when it comes out clean the muffins are done.  Cool for 5 minutes before taking out of pan.  Enjoy!
