In this recipe we will be revitalizing the packaged bread contained in the meal boxes. This is 2 generous servings.
2 Packets of Wheat Snack Bread*
1 Packet Cinnamon Bun*
1 Applesauce Cup (or pouch)*
3/4 Cup Milk*
2 Eggs
1/2 Medium Banana
1/2 Cup Old Fashioned or Quick Cook Oats
1 Teaspoon Vanilla Extract
Syrup
Optional ingredients – 1/4 cup dried fruit or nuts
Spray a small pan with cooking spray (I found a pie pan to be about the correct size for this recipe). Preheat oven to 375 degrees.
Remove the bread and bun from the packages cut into bite size pieces. I cut the bun into smaller pieces to mix more thoroughly with the bread and it worked well.
In a small bowl mix the milk, applesauce, eggs, vanilla and whisk well. Smash up the banana thoroughly and mix into the milk mixture. Pour the oatmeal into this and mix well again. (Optionally, you can run the whole mixture in the blender if you’d like it more smooth.)
Put the bread mix into the sprayed dish and pour the liquid mixture over the whole thing making sure all the bread is coated. Let soak for about 5 minutes before putting into the oven for approximately 20 minutes or until set and golden brown.
Serve with a bit of maple syrup over the top.
