The days are starting to get shorter and it’s finally cooler in the mornings, fall is here! This recipe will start anyone’s day off right but tell the kids in your life that they get to have cookies for breakfast and even the most reluctant eater will be excited to get out of bed. With fresh apples, oatmeal, and warm spices this breakfast will keep bellies full and happy until lunch.
Apple Oatmeal Breakfast Cookies
1 Cup Quick Cooking Oats
3/4 Cup Flour (all purpose or whole wheat or a mix of both)
1 1/2 tsp Baking Powder
1 – 2 tsp Cinnamon
1/4 tsp Nutmeg (or pumpkin pie spice)
1 1/2 tbsp Coconut Oil or Butter (melted)
1 Large Egg
1 tsp Vanilla
1/4 Cup maple syrup or honey or a mix of both
5 tbsp milk of choice
3/4 Cup finely diced or grated apple.
Directions:
Preheat oven to 325. Mix all dry ingredients in a medium size bowl. Add all wet ingredients and apple to the dry mix and stir until combined. Your batter will be very wet. Place large spoonfulls of batter on a parchment paper lined cookie sheet and flatten slightly. Bake for 9-11 minutes. Let sit for 10 minutes before removing from cookie sheet to cool. This recipe makes 8 large cookies.
Any apples can be used in this recipe; sweeter apples will make a sweeter cookie. For added nutrition try adding in flax seed, chia seed, chopped nuts/seeds, or dried fruit. These freeze very well for large batch cooking.
