Try it Tuesday! Skillet Granola

Skillet granola might be one of the easiest things to make that is SO delicious.  Customize it however you and your family like.  Enjoy it plain, as cereal with milk, on yogurt, on pancakes and waffles, on muffins, or any other way you can think of!

Skillet Granola

2 tbs oil of choice (coconut, grapeseed, or canola oil work well)

1/3 cup maple syrup or liquid sweetener of choice

1 1/2 tsp cinnamon (or spice mix of choice)

2 tbs brown sugar

2 cups old fashioned oats

pinch of salt

1/2 cup of add ins (nuts, seeds, dried fruit)

Heat a non-stick pan to medium heat.  Add in oil, maple syrup, nuts/seeds, cinnamon, brown sugar, salt and stir well over heat for about 2 minutes to allow everything to start caramelizing together.  Turn heat up to medium high and add in oats.  Mix well and continue to stir over heat while the oats toast.  Do not leave unattended or the sugar may burn.  Continue to mix for 5-7 minutes until the oats are toasted.  Turn off heat and add in dried fruit if you are including that.  Spread onto a lined cookie sheet and press down with the back of the spatula and allow to cool.  Once cool the granola can be stored in a jar for up to 5 days on your countertop.
