Quick Sautéed Cabbage

Cabbage is currently in season and is a wonderful addition to any meal. It is extremely nutritious and high in fiber. If you haven’t tried cabbage in a while now is a good time to give it another chance! If you are a cabbage lover here is a fast and easy way to prepare it. The result is a delicious and flavorful dish that is mild and easy to add to any plate (don’t forget it is wonderful on sandwiches too). Enjoy!

1 to 1.5 lbs cabbage (one small or half a medium head)
1/2 medium onion
2 Tablespoons oil of choice
1 Teaspoon paprika
1 Teaspoon garlic (fresh or powder)
Salt and pepper to taste

Add oil to a non-stick pan over medium heat. Peel onion and slice half of it thinly. Add the sliced onion to the oil and stir. While the onion is cooking, remove the core of your cabbage and slice it to your preference of thickness. Add cabbage to pan and stir well. Add salt to taste (the salt will also work to help pull the moisture from the cabbage which will help it cook down faster) and stir occasionally – turning temperature down if it is browning too quickly. After about 6 minutes add in a teaspoon of paprika and a teaspoon of garlic (fresh or powder); stir well. Continue to cook until the cabbage is cooked down (about 10-12 minutes) and soft. Remember, the longer you cook it the sweeter and more mild the cabbage becomes. Serve alongside any meal but is especially good with white beans or pork.
