Try it Tuesday! Homemade Mac and Cheese

Here is a delicious recipe that uses plain Greek yogurt in place of milk used in traditional recipes.  Greek yogurt is higher in protein and a good source of calcium.   For added nutrition it also uses grated carrots but there are a whole host of veggies that add flavor and texture to this dish.

Homemade Mac and Cheese

2 cups pasta of choice

1/2 cup plain Greek yogurt

About 6 ounces grated cheese of choice

1/3 cup grated carrot (other options are peas, broccoli or cauliflower florets, chopped spinach, etc)

1/2 TSP paprika

1/2 TSP Garlic Powder

Salt/Pepper to taste

Cook pasta according to directions.  Add in carrots about 2 minutes before pasta is finished. Reserve 1/2 cup of pasta water. Add in all other ingredients and spices. Add in about 2 TBS of the reserved pasta water and stir.  Add in more water if the dish is too dry (I ended up using about 1/4 cup of the water). Mix well over very low heat just until the cheese is melted. Turn off heat and mix well.  Let stand a few minutes if the sauce need to thicken.
