Easy Frittata

Ingredients:

6 large eggs

1/2 cup milk or heavy cream

Up to 2 cups of add ins – try bacon, ham, sausage, greens, onions, peppers, potato, tomato, zucchini, herbs, etc.

1/2 cup shredded cheese

2 tbs butter

2 tbs oil

1/2 tsp garlic powder

salt and pepper to taste

Directions:

Preheat oven to 400 degrees. Crack eggs into a dish, add milk, salt and pepper, and mix well; set aside.  Heat a 10-12 inch oven safe skillet to medium heat and cook protein according to directions – take cooked proteins out and set aside.  Add butter and oil to pan (if not enough oil leftover in the pan from cooking the protein) and sauté all veggies until they are cooked, add in garlic powder.  Spread veggies in the pan, add back in protein, and sprinkle cheese over it.  Pour egg mixture over everything (do not mix) and let cook until edges are set, about 4 minutes.  Once edges are set, transfer to oven and bake for 8-10 minutes until eggs are set.  Let cool for 5 minutes before cutting and serving.
