Try it Tuesday! Delicata Squash

These little squashes are so tasty and easy to cook.  No need to peel, the skin is very tender and edible.  Pair with rice or quinoa for a quick and easy side dish! One squash is a perfect portion for two people.

Roasted Delicata Squash

1 Delicata Squash

1 Tbs Olive Oil

1 Tsp smoked paprika

Salt/Pepper to taste

Directions:

Preheat oven to 400 degrees. Slice squash lengthwise and remove seeds.  Slice each half in quarter inch slices.  Toss slices with oil and seasoning.  Lay sliced squash on a lined sheet tray. Bake for 12 minutes on one side, flip and bake for another 10 minutes or until desired doneness.  Enjoy!
