It’s July in southern Indiana and it’s HOT, y’all. The perfect time for crisp, refreshing cucumbers! This recipe is perfect when you don’t want to heat up your house with cooking when you are looking for a delightfully light meal or snack. This recipe is really quick and can be put on bread for a more substantial meal.
This recipe serves 2 whether you put on crackers or bread.
Crackers of choice or 4 slices bread. Try whole grain to ramp up the nutritional value.
3 tbs either sour cream or cream cheese depending on preference and how thick you would like the spread to be.
2 tbs mayonnaise
1/2 tsp garlic powder
1/2 tsp onion powder
1/2-1 tsp dill depending on desired taste
1/2 tsp lemon juice
Salt and pepper to taste
Directions: Mix all the items for the spread. Spread on cracker or bread and add sliced cucumber. Enjoy immediately.
