Try it Tuesday! Cheesy Zucchini Tots

This is a fun way to use up zucchini (yellow squash will work too)! Use any combination of spices your family likes for this delicious side dish.

Cheesy Zucchini Tots

2-3 small zucchinis grated

2/3 cups bread or cracker crumbs

1/2 cup cheese of choice (try shredded sharp cheddar, parmesan, or shredded non dairy cheese)

2 eggs

1 tsp cornstarch

1 tsp garlic

1/2 tsp onion powder

1/2 tsp dried parsley

1/2 tsp Old Bay Seasoning

1 tsp paprika

Oil of choice

Salt/Pepper to taste

Directions:

Heat oven to 425. Put the grated zucchini in a colander and squeeze excess liquid out.  Mix all ingredients together well.  Line a cookie sheet with parchment paper.  Use a tablespoon to scoop the mixture, form into a tot shape, and place it on the parchment paper.  Repeat until mixture is gone.  Spray or lightly brush the top of the tots with oil before putting in the oven.  Bake for 18-23 minutes until browned.  Serve immediately with ranch, marinara, or ketchup.
